Chicken Gnocchi Soup

Comfort is where it's at. Anytime I don't feel 100% this is my go-to. Below are the ingredients you need but no exact measurements, as I don't use them in a lot of my cooking. I eyeball it! I like a little more garlic and spinach than others, and when I cook this for my husband I do not use onions at all. So take the ingredients below and make it your own!


INGREDIENTS

- Chicken

- Italian seasoning

- Salt and Pepper

- Olive oil

- Butter

- Carrots

- Celery

- Onion

- Garlic

- Chicken broth

- Gnocchi

- Half and half (I used whole milk)

- Spinach

- Lemon

- Parsley


COOK IT

Start with your chicken! I'm usually just making this for myself so I season up two chicken cutlets with Salt and Pepper and Italian Seasoning


Saute it up in the pot you will cook the rest of the soup in. Saute for a few minutes on each side and then remove and rest for a few minutes.


Add in as much onion, carrots and celery as you want into the pot with some butter and olive oil. Saute those for a few minutes until soft and then add in the garlic and saute for a minute or two more.


Meanwhile cut up or shred your chicken.


Add in chicken broth, I again eyeball this but it is usually around 4 cups of water. Then add back in your chicken and bring to a boil and simmer for a few minutes.


Then add in your gnocchi and let it cook through. Then add in half and half or milk and spinach until it wilts.


Spoon into bowls and top with a lemon squeeze and parsley and you are done!
