Balsamic Chicken

This is the perfect summertime grilling meal. Below is a marinate you can use for chicken or also veggies. I pair this with some veggies and will toss the marinade with them sometimes. Great with roasted potatoes or in a rice bowl.


1 lb chicken

1 cloves garlic

1 tsp rosemary - fresh

1/4 cup chicken broth

1/2 cup balsamic vinegar

2 tbsp honey

1/2 salt

1/4 black pepper

1 tbsp olive oil


Mix up the marinade and save a decent amount for the very end of cooking. I toss mine in a plastic bag and pour a little out into a jar to save. Then, let the chicken sit in marinate for at least 30 min minimum even overnight if you enjoy a very big flavor.

With the extra marinade, you can drizzle it over veggies as you cook or reduce it in a pan and top over chicken as you plate.

Saute or grill chicken until it hits 165 temp and remove to rest for 5 minutes. Then top with reduced sauce and serve!
